Tropical Coconut Shrimp Salad

I wanted to make a salad recipe inspired by a favorite restaurant dish, and decided that Red Lobster's coconut shrimp would be perfect. At Red Lobster, their coconut shrimp is AMAZING and is served with a delicious piña colada sauce. Both the shrimp and the flavors of the sauce inspired this salad, which is basically a healthier spin on the meal. I made this for my parents and I for dinner, and it was both filling AND delicious! My parents approved!

I will say that the amount of dressing this makes is about double what we used, but I decided to include the full recipe because everybody likes different amounts of dressing on their salads. This recipe serves three people, but you can definitely increase or decrease the amounts to serve as many people as you need. I definitely recommend making this as a healthy, fresh summer meal that is super tropical!

 

Shrimp Salad Recipe

Serves 3

Ingredients:

- 3/4 pound shrimp

- 3/4 cup coconut milk, divided

- 1/4 tsp ground ginger

- 1/4 tsp garlic powder

- 1/4 tsp smoked paprika

- 1 tbsp tahini

- 1/4 cup pineapple juice

- 1 tbsp lime juice

- 1/2 tbsp olive oil

- 3 oz baby spinach

- 1/4 cup unsweetened coconut shreds

- 1/4 cup chopped scallions

- 1 cup diced pineapple

- salt and pepper to taste


Steps:

1. Marinate shrimp in 1/2 cup of coconut milk, ginger, garlic, and paprika for at least 30 minutes in the fridge.

2. Combine the remaining 1/4 cup of coconut milk, tahini, pineapple juice, lime juice, and olive oil in a small bowl to make the dressing and store in the fridge.

3. Once marinated, saute the shrimp in a pan over medium heat until fully cooked (no oil is needed because the marinade provides plenty of sauteing liquid).

4. At the same time, in a separate dry pan, toast the coconut over medium-low heat until crispy and golden brown, stirring often so that it doesn't burn.

5. Lightly toss spinach with the coconut dressing.

6. Top the dressed spinach with diced pineapple, shrimp, coconut, scallions, and more dressing as needed.

*Tip: Serve with cheddar drop biscuits to get the full Red Lobster experience.
