Saucy Roasted Veggies over Cous Cous

This is a nice healthy recipe with some great summery vegetables, perfect for this hot weather! It does take a bit of time to make, but is perfect to meal prep for the week. It can easily be doubled to make a week's worth of meals for two people! This recipe has some delicious Mediterranean-inspired flavors and is also vegan!

If you aren't a fan of these specific vegetables, you could definitely swap them out for whatever veggies you like. You could also replace the chickpeas with another plant-based protein, such as tofu or tempeh to switch things up. You can even swap out the cous cous for another pasta or grain, or even serve this veggie mixture in a wrap or salad. There are so many ways to customize this and make it your own!

 

Veggie Cous Cous Recipe

Serves 3-4

Ingredients:

- 1 medium zucchini

- 1/2 medium eggplant, peeled

- 1 can chickpeas, drained and rinsed

- 1 tbsp avocado or vegetable oil

- 1/2 tsp salt

- 1/4 tsp pepper

- 1/2 tsp garlic powder

- 1/2 tsp onion powder

- 1 1/2 tsp za'atar

- 1 cup dry pearl cous cous

- 1/2 cup roasted red pepper sauce

- 1 can diced tomatoes


Steps:

1. Preheat the oven to 425 degrees Fahrenheit.

2. Chop zucchini and eggplant into even bite-sized pieces.

3. On a lined baking sheet, add chopped eggplant and zucchini along with the chickpeas.

4. Add oil, salt, pepper, garlic powder, onion powder, and za'atar to the veggies and chickpeas and mix to coat everything.

5. Roast in the oven for 15-20 minutes, stirring once halfway through.

6. Cook cous cous according to the package directions.

7. In a small sauce pot over medium high heat, combine roasted red pepper sauce and

whole can of tomatoes with the liquid.

8. Cook sauce for about 10 minutes, stirring often, until slightly thickened and reduced.

9. In a bowl, combine roasted vegetables and chickpeas with the tomato red pepper sauce.

10. Top the cous cous with the sauced veggies and chickpeas.

*Tip: If you can't find roasted red pepper sauce and don't want to make it, you can substitute it for roasted red pepper pesto or even just some tomato sauce.
