Glazed Skillet Cornbread

If you love cornbread but don't want to put in the work of making it completely from scratch, then this cornbread is the perfect recipe for you. It uses a box of cornbread mix, but ends up tasting a million times better than if you simply followed those instructions. The hot honey glaze on top really pulls it all together and makes this cornbread the best ever.
You could certainly take out any extra add-ins or replace them with others, such as jalapeños or even tomatoes. You could get super creative with this and use the recipe as a starting point to create your perfect cornbread!

Cornbread Recipe
Serves 8
Ingredients:
- 1 cup buttermilk
- 2 tbsp sour cream
- 1/3 cup butter, melted
- 1 egg
- 1 box cornbread mix
- 1 scallion, finely chopped
- 1/2 cup canned corn
- 1/2 cup cheddar cheese
- salt, to taste
- pepper, to taste
- 1 tbsp honey
- 1 tbsp hot sauce
Steps:
1. Preheat the oven to 375 degrees Fahrenheit.
2. Grease cast iron skillet lightly with butter or oil and place it in the oven while it preheats.
3. In a medium bowl, whisk together the buttermilk, sour cream, butter, and egg.
4. Add cornbread mix, scallions, corn, cheese, salt, and pepper to the wet mixture and stir
until just combined.
5. Transfer batter to the cast iron skillet and cook for 20-22 minutes.
6. In a small bowl, combine hot sauce and honey.
7. When cornbread is done, pour the hot honey mixture all over the top.
8. Place it back in the oven for 2 minutes for the glaze to adhere.
9. Allow to cool for at least 5-10 minutes before serving.
*Tip: Check the back of the cornbread mix box for timing if you want to make these into corn muffins or use a different type of pan.
