Triple Tomato Sauce

I recently went to Trader Joe's and I really wanted to try the cauliflower gnocchi, so I bought some! Unfortunately, I cooked it wrong and it didn't turn out how it should have, but the sauce I made for it was still really good! I wanted to share it with you because it uses things you probably have in the house and is super tomato-y.

You could definitely serve this with gnocchi (as long as you actually cook it properly!) or even just some regular pasta. Feel free to also add whatever herbs and flavors you like to customize this sauce! It's good as is but could definitely also benefit from some fresh herbs or veggies as well!

 

Tomato Sauce Recipe

Serves 4

Ingredients:

- 1 tbsp oil

- 1 tsp garlic paste (or 1 garlic clove, minced)

- 1/2 tbsp italian seasoning

- 1/2 tbsp onion powder

- 1/2 tbsp tomato paste

- 1 tbsp jarred mushrooms

- 1 tbsp jarred sun-dried tomatoes

- about 8 cherry tomatoes

- 2 cups jarred tomato sauce

- 1 cup almond milk


Steps:

1. Heat a small sauce pot on the stove on medium heat.

2. Add oil, garlic, italian seasoning, onion powder, and tomato paste and saute until fragrant.

3. Add mushrooms, sun-dried tomatoes, cherry tomatoes, and tomato sauce and stir.

4. Cover and simmer for about 5 minutes on low heat.

5. Stir and break up the cherry tomatoes a little bit.

6. Cover again and simmer for another 5 minutes.

7. Stir in the almond milk, then cover and simmer for about 5 more minutes.

8. Serve with pasta or gnocchi of choice.

*Tip: If you don't like chunky sauces, add the sauce to a blender and blend until smooth.
