Tofu Curry Rice Bowl

For some reason, I've been really wanting some brussels sprouts lately and this bowl was the perfect way to get those! I keep seeing all of these bowls on Instagram full of veggies and they all just look so fresh and delicious, so that inspired me! The coconut curry sauce I made gave it a really nice flavor and was not spicy at all, which I loved.

The vegetables I used went really well together and were great with the sauce, but you could definitely change them up! Try replacing the brussels sprouts with another green veggie, such as broccoli or kale. You could also swap the sweet potato for a different starchy vegetable like cauliflower or butternut squash. I really hope you enjoy this bowl and feel super healthy after eating it!!

 

Curry Bowl Recipe

Ingredients:

- 1/2 package extra firm tofu, pressed

- 1/4 cup uncooked brown rice

- 10-12 brussels sprouts

- 1 small sweet potato

- 2 tsp red curry paste

- 1 can coconut milk

- 1 tbsp cornstarch (or 2 tbsp flour)

- 1 tbsp coconut oil

- 1 1/2 tsp vegetable oil

- 1/4 tsp ground cinnamon

- 1 tsp lime juice

- Salt

- Pepper

- Pickled onions (optional)


Steps:

1. Begin cooking rice according to package directions.

2. Preheat the oven to 400 degrees F.

3. Cut veggies in to small, uniform pieces and tofu into 1-inch cubes.

4. Toss sweet potatoes with 1/2 tsp vegetable oil, salt, and pepper and place on a baking tray lined with parchment paper or a silicone mat.

5. Bake the sweet potatoes in the oven for 5 minutes.

6. Toss brussels sprouts with 1/2 tsp vegetable oil, salt, and pepper and repeat with tofu.

7. Add brussels sprouts and tofu to the tray with the sweet potatoes and bake for about 30- 40 minutes in the oven, checking and flipping often (oven times may vary).

8. Meanwhile, combine cornstarch and coconut oil in a small pot over medium heat.

9. Add coconut milk, curry paste, and cinnamon and whisk everything together.

10. Turn the heat down and continue cooking and whisking until thickened.

11. Once the sauce is done, add lime juice and stir one last time.

12. Assemble all of the ingredients in a bowl and top with pickled onions.

*Tip: If you like things spicy, either add more curry paste or add some red pepper flakes to the sauce.
