Sweet Potato "Toast"

This sweet potato "toast" has been sort of a trend for a little while, and I was very curious how it actually would taste. While it certainly isn't the same as actual toast, this recipe actually tastes super delicious and is also really healthy! It's pretty simple to make and is very customize-able to fit your liking. I hope you give this a try and enjoy it!

 

"Toast" Recipe

Serves 2

Ingredients:

- 1 sweet potato, sliced into 4 pieces longways

- 3/4 can chickpeas, drained and rinsed

- 1/2 tsp smoked paprika

- 1/2 tsp oregano

- 1/2 tsp onion powder

- 1/2 tsp garlic powder

- 1 tsp salt, divided in half

- 1 tsp pepper, divided in half

- 1/2 tsp turmeric

- 1/2 tsp cumin

- vegetable oil

- 1 recipe eggplant dip (from my eggplant dip post)


Steps:

1. Preheat the oven to 450 degrees Fahrenheit.

2. Coat the sweet potato slices with a little bit of oil and half of the salt and pepper.

3. Coat the chickpeas with a bit of oil, the rest of the salt and pepper, and all of the spices.

4. Place sweet potatoes and chickpeas on a parchment lined baking sheet.

5. Put in the oven for about 18 minutes, flipping once halfway through.

6. Spread some eggplant dip on each slice of sweet potato, then top with the chickpeas.
