Spooky-Good Halloween Candy

Surprise! I normally don't post in the middle of the week, but this time I decided to help you out with some last minute Halloween candy recipes to make for your friends. Whether you like to be a little extra and give out homemade candy, or if you want a sweet treat to share with friends, or even if you just want to pig out on some less-processed candy, these recipes are for you!

I'll be giving you three candy recipes here, two of which are inspired by popular candy brands and one which is just a fun candy to make! If you're looking for a fourth, check out my recent post about tahini butter cups! I really hope you give these all a try, as they are super simple and require very few ingredients!

*Disclaimer: The idea for the ingredients in the Butterfinger was not my idea, as I have seen it in other instances, but I used my own ratios and did not follow any specific recipe.

 

Butterfinger Bar

Ingredients:

- 1/2 cup candy corn

- 1/2 cup creamy peanut butter

- 1/2 cup semi-sweet chocolate chips


Steps:

1. Heat the candy corn and peanut butter together in the microwave in 30 second intervals until everything is well combined and dough-like.

2. Form into a rectangle of desired thickness on a sheet pan covered with wax paper.

3. Freeze until solid, then cut into about 10-12 small rectangles.

4. Melt the chocolate chips in the microwave or on a double boiler.

5. Dip the bottom in chocolate, then drizzle some chocolate on top.

*Tip: If desired, use about double the chocolate and fully coat each bar for a much chocolatier result.

 

Mounds Bar

Ingredients:

- 1 1/4 cup unsweetened coconut flakes

- 1/4 cup almond milk

- 2-3 drops coconut extract (optional)

- 1/2 cup powdered sugar

- pinch of salt

- 1/2 cup semi-sweet chocolate chips


Steps:

1. Pulse coconut flakes on high for about 6-7 minutes in a food processor.

2. Add almond milk and pulse for another 1-2 minutes until well combined.

3. Add powdered sugar, salt, and optional coconut extract and stir.

4. Form into a rectangle of desired thickness on a wax paper-lined sheet pan.

5. Freeze, then cut into about 10-12 small rectangles.

6. Melt chocolate chips in the microwave or double boiler.

7. Dip the bottoms in chocolate, then drizzle the rest on top.

*Tip: Add whole almonds before freezing to make these more like an Almond Joy instead!

 

Pumpkin Spice Bark

Ingredients:

- 1 bag vanilla candy melts (orange or white)

- 1-2 graham cracker sheets

- pumpkin pie spice, to taste


Steps:

1. Melt the candy melts in the microwave.

2. Spread them into a thin, even layer on a waxed paper-lined sheet tray.

3. Top with a variety of sizes of broken pieces of graham cracker.

4. Drizzle what's left in the bowl of melted candy melts on top.

5. Add pumpkin pie spice all over.

6. Freeze, then break into various sizes of pieces.

*Tip: Use cinnamon graham crackers for extra flavor!
