Pumpkin White Chocolate Cake Cookies

Fall is finally here! If you're like me, you love all the warm flavors of fall and hate having to wait to enjoy them. So, I actually made these cookies about a month ago but decided to wait until it was officially fall to post them. These cookies are so delicious and if you are a pumpkin spice lover, you are sure to be intrigued.

I have made cake mix cookies before, but this time I decided to switch some things up to make this pumpkin version, which is actually vegan if you leave the white chocolate out (and make sure the cake mix is vegan, many are though). I was a bit shocked at how good these were, considering it was my first time making them and I was going out on a limb a little with this idea! I really hope you give these a try, you won't regret it!

 

Pumpkin Cookie Recipe

Serves 24-28

Ingredients:

- 1 box yellow or white cake mix

- 1/2 cup pumpkin puree

- 1 tsp pumpkin pie spice

- 1/2 cup vegetable oil

- 1/3 cup white chocolate chips


Steps:

1. Preheat the oven to 350 degrees Fahrenheit.

2. Combine cake mix, pumpkin puree, pumpkin pie spice, and vegetable oil with a whisk.

3. Fold in the white chocolate chips with a spoon or rubber spatula.

4. Use a small cookie scoop to scoop cookies onto a baking sheet lined with parchment

paper, leaving about an inch between each cookie.

5. Bake for 11-13 minutes or until set and slightly golden brown on the bottom.

6. Let cookies cool on the pan for 2 minutes, then move to a cooling rack.

*Tip: If you want to make these vegan, replace the white chocolate chips with vegan dark chocolate chips or simply leave them out!
