Pumpkin Cranberry Cake Donuts

These are the perfect donuts for fall or even winter! They combine two iconic cold weather flavors (pumpkin and cranberry) to create a delicious donut that makes the perfect breakfast, dessert, or even snack! I came up with the ratios for this completely on my own and they actually turned out really good! They are basically like a super moist and dense muffin-like texture, but in the shape of a donut!

If you do not have a donut pan, you can order a mini-donut pan from Amazon like I did, or simply use a muffin tin instead. They would still taste the same, but just be in a different form which is no big deal! The glaze on these makes them 10x better, but you could also leave it off if you want to cut back on the sugar or if glaze just isn't your thing. I hope you guys enjoy this simple and delicious recipe!

 

Pumpkin Cranberry Donut Recipe

Serves 9

Ingredients:

- 1 cup flour

- 1/4 cup white sugar

- 1/4 cup brown sugar

- 1/4 tsp salt

- 1 tsp baking powder

- 1/2 tsp cinnamon

- 1/2 cup pumpkin puree

- 1 tbsp chia seeds

- 1/2 cup plant-based milk (I used almond)

- 1/4 cup dried cranberries

For the glaze: - 1 cup powdered sugar

- 1 tbsp plant-based milk

- 1/4 tsp cinnamon

- pinch of salt


Steps:

1. In a small bowl, combine chia seeds with 2 1/2 tbsp water and allow to sit and thicken.

2. Preheat the oven to 350 degrees Fahrenheit.

3. In a medium bowl, combine the flour, white sugar, brown sugar, salt, baking powder, and

cinnamon.

4. Add pumpkin puree, thickened chia seed mixture, and milk and stir just until combined.

5. Fold in the dried cranberries.

6. Spray a mini donut pan (or muffin tin) with nonstick spray.

7. Fill each indent with batter.

8. Bake for 12-15 minutes or until the top is golden and a toothpick comes out clean when

inserted.

9. Allow the donuts to cool in the pan for 2 minutes, then carefully remove and allow to cool

for a bit longer before icing.

10. Combine all glaze ingredients in a shallow dish.

11. Dip each donut into the glaze or drizzle it on top.

*Tip: Once glazed, the donuts should be eaten within a few hours. Once they sit for a while with the icing, it will start to seep into the donut and will still taste fine, but will change the texture a bit.
