Monkey Munch Blondies

Monkey Munch is a healthier trail mix, sold by Evolved Chocolate, which consists of chewy banana chips, dark chocolate, coconut, and mixed nuts. I definitely recommend it (and everything else from this brand!) as a healthy snack or treat. This recipe I came up with is inspired by the flavors in the trail mix and uses Evolved's unsweetened roasted coconut butter! I didn't add any nuts to mine, but they are an option if you want the blondies to have an extra crunch and taste even more like Monkey Munch.

While I came up with the idea for the blondies, I did use a recipe from another online source for the blondies themselves, but changed a couple of ingredients to make it vegan and add flavor and created my own icing rather than using the one in the recipe. I absolutely love how these turned out, and my parents loved them too (they didn't even know that they were vegan!) They seriously remind me of banana bread, only denser and moister. Blondie Recipe

Serves 16

Blondie Ingredients:

- 1/2 cup coconut oil

- 1 cup light brown sugar

- 1 1/2 tsp vanilla extract

- 1/4 tsp salt

- 1 cup flour

- 1 1/2 medium bananas

- 1/2 cup dark chocolate, chopped


Glaze Ingredients:

- 1 tbsp unsweetened roasted coconut butter,

melted

- 2 tbsp almond milk

- 1 cup powdered sugar

- pinch of salt


Steps:

1. Preheat oven to 350°.

2. Line an 8×8 baking dish with foil and spray with cooking spray and set aside.

3. In a stand mixer, combine melted coconut oil and brown sugar.

4. Add in 1/2 a banana and vanilla and mix until incorporated.

5. Fold in salt, flour, the whole banana, and chocolate chunks until batter is smooth and even.

6. Spread in prepared pan and bake for 30-35 minutes until center is set.

7. Transfer pan to wire rack to cool.

8. Once blondies have cooled, whisk together coconut butter, powdered sugar, almond milk, and a pinch of salt until smooth (and microwave for 10 seconds if any clumps won't go away).

9. Pour glaze over the cooled blondies and spread so that it goes over the whole top and edges.

10. Refrigerate for at least an hour before cutting into 16 squares.

*Tip: If you don't want to order coconut butter, replace it with an extra tablespoon of almond milk and add a couple drops of coconut extract for a similar flavor (but I still definitely recommend the coconut butter!)
