Meatball Stroganoff

This recipe came about when I realized I had lots of frozen turkey cranberry meatballs from Trader Joe's and I had no idea what to do with them. I figured the flavor wouldn't go well with tomato sauce, but rather needed a creamy, gravy-like sauce to go with those flavors. I did some research into good ratios for this type of sauce and ultimately came up with my own recipe for this sauce that is a little healthier than the usual!

The meatballs were so good in this sauce and so was the pasta! I loved that it made several portions so I could use it as a weekly lunch meal prep, but it would also make a great dinner for a group of people. I definitely recommend this recipe, especially because it is so versatile. You could use any type of meatballs you have/like, even vegan meatballs would work! This is also a great recipe to add some vegetables into (sweet peas go sooo well with this dish!) I hope you all give this a try and love it.

 

Stroganoff Recipe

Serves 4

Ingredients:

- 4 servings cooked pasta or rice

- 16 frozen meatballs

- 2.5 tbsp butter

- 2 tbsp flour

- 1/4 tsp mustard powder

- 1/2 tsp garlic powder

- 1/2 tsp onion powder

- 1/4 tsp dried thyme

- 1/4 tsp salt

- 1/4 tsp black pepper

- 1 cup vegetable broth

- 2 tbsp soy sauce

- 1/4 cup plain nonfat Greek yogurt

- 1 tsp Gravy Master (optional)


Steps:

1. Cook meatballs according to package directions, using the oven instructions if possible.

2. In a medium saucepan, melt butter over medium heat.

3. Add flour, mustard powder, garlic powder, onion powder, thyme, salt, and pepper and stir until well combined, cooking for about a minute.

4. Add vegetable broth and whisk until everything is well combined.

5. Cook over medium heat for about 5-6 minutes, whisking often, until thickened enough to coat the back of a spoon.

6. Remove mixture from the heat and add soy sauce, Gravy Master (optional), and Greek yogurt and stir until fully combined.

7. Taste and season with more salt and pepper if needed.

8. Mix the cooked meatballs with the sauce and serve over the pasta/rice.

*Tip: If the sauce tastes too salty or tangy, add a pinch of sugar to balance it out.
