Mean Green Pasta Sauce

I kind of made this originally to just use up some ingredients I had in the house, but it turned out really good! Feel free to tweak the measurements as much as you'd like so that the flavors are all balanced nicely! I served this sauce with one serving of pasta and some roasted corn, but it could definitely be stretched between two bowls if you don't like your pasta quite as saucy as I do.
While I did call this a pasta sauce, it would also definitely be delicious mixed with rice, on a taco, or even as a dip for some chips. It is obviously very similar to guacamole, except it is much creamier and does not require quite as many ingredients. I even added some smoked paprika on top of mine and that really added some nice depth of flavor. This is certainly not guacamole, but if you are a fan of guacamole, you'll love this!

Mean Green Sauce Recipe
Serves 1-2
Ingredients:
- 1 ripe avocado
- 2 tsp lime juice
- 2 handfuls cilantro
- about 1 tbsp almond milk
- salt & pepper to taste
Steps:
1. Add avocado, lime juice, cilantro, salt, and
pepper to a blender or food processor and
blend until smooth.
2. Add almond milk to make the sauce more
creamy and blended.
*Tip: This sauce is naturally very thick, so if you prefer a much thinner sauce, add as much almond milk as you need to make it how you like it.
