Meal Prep Breakfast Burritos

I have been wanting to make something with a tofu scramble for a really long time, and I finally got to do it in this recipe! I got some ideas from other recipes as far as how long to cook the tofu and kind of just the methods, but overall this is my own recipe. The scramble doesn't taste exactly like eggs, but it is actually pretty similar and tastes really good! However, you could definitely use actual eggs in place of the tofu scramble if you wanted to, but the burritos just wouldn't be vegan.

This recipe is really good for feeding a bunch of people or for keeping in the freezer as a meal prep option. They can be enjoyed at any time of day and are very filling and healthy! You can also change up the ingredients a bit to fit your tastes or make different ones to have a variety for the week. I hope you give these a try; you wont regret it!

 

Burrito Recipe

Serves 6

Ingredients:

- 6 large tortillas/wraps

- 1 14oz package firm tofu, cut into pieces

- 3 large handfuls spinach

- 1 clove garlic, minched

- 1 yellow onion, diced

- 1 large sweet potato, cubed

- 3 tbsp salsa

- 1 tbsp vegetable oil

- 2 tbsp non-dairy milk

- 1/4 tsp turmeric

- 1-2 tbsp nutritional yeast

- salt, to taste

- pepper, to taste


Steps:

1. Preheat oven to 450 degrees Fahrenheit.

2. Mix sweet potatoes with oil, salt, and pepper and put on a lined sheet pan in the oven for 20-25 minutes, flipping once halfway through.

3. On the stove, add onions to a pan and cook on medium heat for about two minutes.

4. Add garlic and cook for another two minutes, or until fragrant.

5. Crumble the tofu pieces into the pan and cook for 3-4 minutes.

6. Add turmeric, salt, pepper, and nutritional yeast and cook for 4-5 more minutes.

7. Add milk and spinach and continue stirring and cooking until the spinach wilts.

8. In a large bowl, combine tofu scramble, sweet potato, and salsa.

9. Lay one tortilla flat, fill with about 3/4 cup of the mixture, and wrap like a burrito, bringing two ends in and rolling the other side.

10. Wrap in plastic wrap, and then in foil.

11. Repeat with the rest of the tortillas and filling.

12. Add the finished tortillas to a large freezer bag and place in the freezer.

13. When ready to enjoy, remove foil and plastic and wrap burrito in a paper towel, then microwave for 1 minute on each side.

*Tip: If the burrito still is cold in the middle, put it back in the microwave for about 15 more seconds (microwaves vary).
