Lemony Chicken Salad

Although it is rare that I post a recipe with meat in it, here is one that is super easy and delicious! One of my favorite parts about it is that you don't need to cook the chicken yourself, which saves so much time and stress! I didn't like chicken salad when I was younger, but now I love it, as long as it has lots of flavor. So, I made sure this recipe packed in the flavor while still being pretty healthy.

This chicken salad is great for meal prep, because it can be used in so many different ways so that you don't get bored of it! It goes great on a salad, in a sandwich, with crackers, or even just eaten with a fork. I definitely recommend trying this recipe, it's so delicious!

 

Chicken Salad Recipe

Serves 4-6

Ingredients:

- 1 cooked rotisserie chicken

- Juice of 1 lemon

- 1 6oz container non-fat Greek yogurt

- 1/4 tsp garlic powder

- 1 1/2 tsp capers

- 2 tbsp mayonnaise

- salt, to taste

- pepper, to taste


Steps:

1. Remove the skin from the rotisserie chicken and discard.

2. Carve the chicken and place in a bowl.

3. Using forks or your hands, shred the chicken.

4. Add lemon juice, yogurt, garlic powder, capers, mayonnaise, salt, and pepper to the shredded chicken.

5. Stir everything until well combined.

*Tip: To add even more lemon flavor, add the lemon zest to the mix as well!
