Individual Fruit Crisp Two Ways

I haven't posted a dessert in a little while, so now I'm giving you two! These recipes have very similar ingredients and steps, but taste much different because of the different textures and flavor profiles. They also are both individual portions, but are pretty big so I would recommend sharing between two people! They're best served with some ice cream or whipped cream, but would still taste delicious without it.

If you want to make these into bigger portions for a group, feel free to expand the recipe by simply doubling, tripling, etc. to get the amount you want. And, of course, put it into a larger dish and bake for a bit longer. I hope you all give at least one of these recipes a try because they are so easy to make and delicious!

 

Berry Crisp Recipe

Serves 1-2

Ingredients:

- 3/4 cup berries (I used raspberries and blackberries, you can use any combo!)

- 1 tbsp butter, cut into small cubes

- 1 tsp lemon juice

- 3-4 basil leaves, chopped finely

- 1 tbsp white sugar

- 1 tsp cornstarch

- 1/4 cup oats, blended into a powder (or equal

amount of oat flour)

- pinch of salt


Steps: 1. Preheat the oven to 350 degrees Fahrenheit.

2. Combine cold butter, sugar, oats, and salt with hands or a fork until the mixture is uniform and crumbly.

3. Combine berries, lemon juice, cornstarch, and basil in a separate bowl.

4. Add berry mixture to a small oven safe baking dish.

5. Top with the crumble, evenly spacing it out.

6. Place the baking dish on a cookie sheet to avoid dripping into the oven.

7. Bake in the oven for 25-30 minutes or until the top is golden brown and crispy.

*Tip: The basil is optional, but I suggest you give it a try! It may sound strange but it adds a really nice flavor to this dessert.



Apple Crisp Recipe

Serves 1-2

Ingredients:

- 1 apple

- 1/4 cup oats

- 1 tbsp brown sugar

- 1 tsp cornstarch

- pinch of salt

- 1 tbsp butter, cut into small cubes

- 1 tsp cinnamon, divided in half

- 1/4 tsp nutmeg, divided in half


Steps:

1. Preheat oven to 350 degrees Fahrenheit.

2. Cut apple into small cubes.

3. Combine butter, sugar, oats, salt, half the cinnamon, and half the nutmeg with hands or a fork until uniform and crumbly.

4. Combine the apples with cornstarch, half the cinnamon, and half the nutmeg.

5. Add the apple mixture to a small baking dish.

6. Top with the crumble and spread it evenly.

7. Place on a cookie sheet to prevent dripping into the oven.

8. Bake in the oven for 35-40 minutes or until golden brown and crispy on top.

*Tip: If you want the apples to stay a bit crisp on the outside, cut into about 1-inch pieces. If you like them a bit softer, cut into smaller pieces.
