Glazed Carrots

A few weeks ago, I had a bunch of extra carrots leftover from a recipe and I wanted to make something quick and easy with them. I came up with this super simple recipe that makes a great side dish with anything. This would be great to serve as a veggie for Thanksgiving for a nice change or even just for a nice weeknight side.
I used a sesame ginger marinade for this, but any sticky sweet sauce would work, such as teriyaki or even barbecue sauce. I really hope you all try this recipe and enjoy it!!

Carrot Recipe
Serves about 4
Ingredients:
- 3-4 carrots, peeled
- 2/3 cup plus 1/8 cup water
- 1/2 tsp grated ginger
- 1 clove garlic, minced
- 1/4 cup sesame ginger sauce
- handful cilantro (optional)
Steps:
1. Chop carrots into about 1 inch pieces, cutting thicker pieces in half lengthwise.
2. Add carrots and 1/3 cup water to a pot over high heat and cook for 5 minutes, covered.
3. Remove the lid, stir, add another 1/3 cup water, then cover and cook for 5 more minutes.
4. Uncover again, stir, and turn the heat down to medium.
5. Check that the carrots are tender by sticking a fork in them.
6. Add the ginger and garlic and stir for about 30 seconds.
7. Add the sauce and 1/8 cup water and stir until the carrots are coated and sticky. There should be no liquid left when they are done.
8. Remove the pot from the heat and stir in some chopped cilantro (optional).
*Tip: If your sauce is super thick, add about 1/4 cup water in step 7 to be sure it coats everything.
