Four Way Pasta Salad

If you want a quick and easy meal prep idea that doesn't involve eating the exact same thing, this post is for you! You could, of course, just pick one or two of these to make, but I decided to make all four to show you guys! They all came out really good, and are not listed in any particular order. My personal favorite was the balsamic one!! Some of these ideas are vegan, some are just vegetarian, and one is neither.

Even if you don't like the idea of any of these combinations, you can take this as a base idea of ratios and what types of ingredients to add. While this is a great meal prep lunch or dinner, it would also be great to make in a big batch and serve at a barbecue or any party.

Pasta Salad Recipes

Serves 4

Ingredients:

First Combo:

- 1 cup cooked pasta

- 1 tbsp barbecue sauce

- 1 tbsp ranch dressing

- 1 tbsp pineapple chunks

- 2/3 cup baby spinach

- 2 tsp capers




Second Combo:

- 1 cup cooked pasta

- 2 tbsp balsamic dressing

- 2 tsp capers

- 1 tbsp sundried tomatoes

- 2/3 cup baby spinach




Third Combo:

- 1 cup cooked pasta

- 2 tbsp caesar dressing

- 1 tbsp sundried tomatoes

- 2/3 cup baby spinach

- 8 slices pepperoni





Fourth Combo:

- 1 cup cooked pasta

- 2 tbsp raspberry vinaigrette

- 2/3 cup spinach

- 2 tbsp dried fruit and nut mix




Steps:

1. Chop spinach, capers, pepperoni, and sundried tomatoes into bite-sized pieces.

2. Add all ingredients (for each individual combo) into a bowl and combine.

*Tip: Make all four combos at once in separate bowls and store them in the fridge for four days of meal prep!

these look sooooo delicious. gonna make them, except for the pepperoni. i will leave that out.
