Festive Peppermint Chocolate Cookies

I am SO proud of these cookies! This was the first time I ever created my own recipe for a baked dessert without using a different recipe to stem from. I looked up some ratios for cookies and loosely went off of that, but it was mostly just me testing stuff and figuring it out! I decided that chocolate peppermint cookies would be festive for the season so that was the flavor profile I used.

These cookies are super minty and perfect for chocolate lovers as well! Because of the baking powder in them, they have a cakey consistency, but you could certainly experiment with replacing that with baking soda to make them have a chewy texture. These would be great to bring to a cookie exchange or holiday gathering!

 

Cookie Recipe

Serves 36

Ingredients:

- 2 sticks butter, room temperature

- 1 cup white sugar

- 1/2 tsp peppermint extract

- 2 eggs

- 2 cups flour

- 1 tsp baking powder

- 1/2 cup dark cocoa powder, sifted

- 1/2 tsp salt

- 1/2 cup semi-sweet chocolate chips

- 2-3 candy canes, crushed


Steps:

1. In a stand mixer with the paddle attachment, mix butter, sugar, and peppermint extract until light and fluffy (about 4-5 minutes).

2. In a separate large bowl, whisk together flour, baking powder, cocoa powder, and salt.

3. Add the eggs one at a time to the butter mixture and mix until fully combined.

4. Add in the dry ingredients along with the crushed peppermint and chocolate chips.

5. Fold all of the ingredients together until a uniform dough comes together, kneading with your hands if needed.

6. Chill the dough in the fridge for at least 30 minutes.

7. Preheat the oven to 350 degrees F.

8. Use a small cookie scoop to scoop cookies onto a lined baking sheet and press the top down slightly on each one.

9. If desired, top the cookies with more crushed peppermint (optional).

10. Bake them in the oven for 12-14 minutes or until set.

11. Cool on the pan for a couple minutes, then transfer to a wire rack to cool completely.

*Tip: If you want to change up the flavors, try using the same recipe but replace the peppermint extract and candy canes with other extracts and add-ins, such as orange or almond!
