Famous Pineapple Fried Rice

I finally caved and decided to give you guys my favorite secret recipe to make (and eat!) I am calling this my famous fried rice because whenever I am asked what my favorite thing to cook is, this is always my answer. So, it is basically famous at this point. It's not only fun to cook, but always tastes so amazing and is so versatile.

This recipe allows you to use any vegetables you have on hand, and even alter the spices and sauces if needed. This is my all time favorite version, but I have made many variations of it and they always turned out amazing. Feel free to use frozen, fresh, or canned for the veggies and pineapple. And if you don't have fresh garlic and ginger, you can used the dried stuff! Green onions can be substituted for any other type of onions, and you can adjust the flavors by adding other spices that you like! I hope you enjoy this recipe as much as I do!

 

Fried Rice Recipe

Serves 2-3

Ingredients:

- 1 tbsp sesame or vegetable oil

- 1 1/2 cups cooked rice, chilled

- 1/2 cup chopped or small veggies (ex: carrots, peas, corn, green beans)

- 1/2 cup chopped pineapple

- 1 tsp grated ginger

- 1 clove garlic, grated/minced

- 1/4 cup sliced green onions (plus more for

garnish, optional)

- 2 eggs

- 2 tbsp soy sauce

- 1 tbsp Thai chili sauce

- 1 tbsp lime juice

- 1/2 tbsp honey or brown sugar

- handful of chopped cilantro, optional

- sesame seeds, optional


Steps:

1. In a small bowl, combine soy sauce, chili sauce, lime juice, and honey/brown sugar with a whisk. Taste and adjust to fit your liking if needed, then set aside.

2. Crack both eggs into a bowl and set aside (do not mix them though!)

3. In a large skillet over medium heat, add the oil.

4. Once hot, add rice and cook for about two minutes, stirring often.

5. Push rice to the sides to make an empty space in the middle and add the veggies, pineapple, garlic, ginger, and onions to that spot.

6. Saute those for about 1-2 minutes in the middle until fragrant.

7. Incorporate the rice and veggie mix together until combined.

8. Add in the sauce and cook for another 2 minutes, stirring often.

9. Push everything to one side of the pan and add the eggs to the other side.

10. Allow the eggs to cook a bit on the bottom, then begin scrambling them in the pan.

11. Once cooked fully, mix the eggs with the rest of the rice mixture.

12. Garnish with the extra green onions, cilantro, and sesame seeds (optional).

*Tip: Measure out all ingredients before beginning and lay them out, because once you start cooking the process moves very quickly. Having everything laid out makes it so much easier.
