Fall Brunch Bowl

Personally, I love the flavors of fall... both sweet and savory. I decided one day that I wanted to have a nice brunch full of savory fall-inspired foods, so I created a bowl with lots of different yummy ingredients. It isn't too complicated to make, and is super customize-able to be able to fit whatever your likes and dietary needs are.

While this meal is enough for one person, it can definitely be expanded to feed several people for a brunch get-together or just for the whole family. It is super filling and also very healthy, so I urge you to give it a try!

 

Brunch Bowl Recipe

Serves 1

Ingredients:

- 1/2 delicata squash

- 1 egg

- 1/2 avocado

- 10 cherry tomatoes

- 1 thick slice halloumi cheese (cut in half)

- 1 clove garlic, minced

- small handful of greens (I used carrot tops)

- everything bagel seasoning

- salt

- pepper

- squeeze of lemon juice

- cooking oil


Steps:

1. Preheat oven to 425 degrees F.

2. Slice delicata squash and toss with oil, salt, and pepper and place on a baking sheet.

3. Bake the squash for 20 minutes on one side, then take out but keep the oven on.

4. Flip the squash pieces, then add 5 cherry tomatoes tossed in oil, salt, and pepper.

5. Put the whole tray back in the oven for about 15 minutes.

6. In the meantime, add a little bit of oil and the garlic to a pan over medium heat.

7. Once fragrant, add greens and cook for a couple minutes, until slightly wilted.

8. Remove greens and add one whisked egg and scramble until cooked.

9. In another pan (or in the same one after washing it out), saute the halloumi cheese until golden brown on each side.

10. Cut the remaining raw tomatoes in half and slice the avocado, then top with lemon juice.

11. Arrange all previously mentioned ingredients in a bowl.

12. Top the avocado and egg with everything bagel seasoning.

*Tip: Roast the whole delicata squash at once and save the other half of the roasted squash pieces in the fridge for a nice snack for later!
