Coconut Strawberries and Cream Oatmeal

This recipe is genuinely one of my favorite recipes I have ever created. I even made it for breakfast two days in a row because it was so delicious! Of course, if you don't like strawberries or coconut, you most likely would not like this recipe. But if you do, this is perfect for you! This makes an amazing breakfast, and it's generally pretty healthy too!

Like most of my other recipes, it is customizeable, however most changes will affect the strawberry coconut flavor. If you want to use another fruit in place of strawberries, such as pineapple or raspberries, that would probably taste delicious also! I really loved the combination of the creamy coconut and the fresh strawberries in this, but feel free to change it to suit your needs and likes. Enjoy!

 

Oatmeal Recipe

Serves 1

Ingredients:

- 1/2 cup oats

- 1 cup water

- 1/4 cup coconut milk

- 1 tsp coconut sugar

- 2 tsp roasted coconut butter (optional)

- pinch of salt

- 2-3 fresh strawberries

- Handful of coconut chips (optional)


Steps:

1. Bring water and salt to a boil in a small pot.

2. Add the oats, stir them in, and reduce to medium heat.

3. Cook for 5 minutes, stirring often so that it doesn't stick to the pan.

4. In the meantime, dice the strawberries and set a little aside for topping.

5. Remove oatmeal from the heat and add coconut milk, most of the strawberries, 1/2 of the coconut butter, and coconut sugar, stirring to combine.

6. Put the pot back on the heat for a couple minutes or until everything is warmed through.

7. Pour into a bowl and top with the remaining strawberries and coconut butter, as well as the coconut chips.

*Tip: If you don't have coconut sugar, use equal amount of maple syrup, honey, or brown sugar. You can also leave the coconut butter out, but it is definitely recommended as it makes the oatmeal much creamier and adds a lot of flavor.
