Coco Loco Fudge

I recently purchased the unsweetened roasted coconut butter from the company Evolved, and it is so delicious. It can be used in so many ways and only contains one ingredient: coconut! You should definitely order some from their website (which I will link below) and use it in this recipe! If you do not want to or cannot buy it, you can replace it with another nut butter and add some coconut oil to help it firm up.

That being said, the texture of this fudge is not as firm as most fudge, but it is still just as delicious. It is slightly more chewy and soft, which I actually love about it! This recipe makes a very small batch, but you can always multiply it to make for a party or just to have more to snack on! It's a relatively healthy dessert that still tastes amazing. I hope you try it out!

Fudge Recipe

Serves 4-8

Ingredients:

- 1/4 cup almond milk

- 3/4 cup chocolate chips

- 1 heaping tbsp roasted coconut butter

- 2-3 drops coconut extract (optional)

- pinch of salt

- unsweetened coconut flakes


Steps:

1. Heat almond milk in the microwave for 30 seconds.

2. Stir in chocolate chips until fully melted, placing back in the microwave for 15 second intervals as needed.

3. Stir in the coconut butter until fully melted.

4. Add a pinch of salt and optional coconut extract and mix.

5. Line a small container with wax paper.

6. Pour chocolate mixture into the container and top with shredded coconut.

7. Freeze until solid for at least two hours or overnight.

8. Remove the fudge and cut into small squares.

9. Store in the freezer for best results.

*Tip: Replace almond milk with coconut milk for a thicker consistency and coco-nuttier flavor.
