Chickpea "Chicken Salad"

I had seen several recipes for "chicken salad" made with chickpeas instead of chicken, and I was eager to give it a try. Of course, chickpeas have nowhere near the same texture as chicken, but the idea is that they are the vessel for the dressing and toppings that a chicken salad would have. I combined the idea of a chickpea chicken salad with my quick chicken salad I made one day with leftover chicken, since the recipe tasted so good!
This recipe, while being super easy to make, is also very easy to customize to fit whatever preferences you have! You could add whatever fruits, vegetables, or nuts to this. You could also use the same idea but for an actual chicken or tuna salad for a meat-eater option. If you want to make it vegan, simply swap the ranch for some vegan ranch or vegan mayo. It is also perfect to be served in many ways, such as in a salad, wrap, or sandwich!

Chickpea Recipe
Serves 3
Ingredients:
- 1 can chickpeas, drained and rinsed
- 3 tbsp ranch dressing
- 1 tbsp lemon juice
- 1 tbsp capers
- garlic powder, to taste
- salt, to taste
- pepper, to taste
Steps:
1. Mash the chickpeas in a bowl until desired consistency is reached (I like it a little chunky).
2. Add ranch, lemon juice, capers, garlic, salt, and pepper and mix everything together.
*Tip: Feel free to add fresh herbs, such as dill, tarragon, or parsley to make it even better!
