Cereal-sly Good Muffins

While on the cruise a while ago, I really wanted some cereal-crusted French toast that I had heard about, but the waiter said they discontinued it! I was so disappointed, and tried to think of how to make that myself. While considering ideas, I thought of trying to do cereal-crusted muffins instead, and hence this recipe was born. It came out delicious and I'm glad I thought of this idea. It's a super simple addition that will add that personal touch to any muffin mix.

I encourage you to give this recipe a try next time you want to impress your friends at brunch (or when you just want a nice sweet breakfast). This is a recipe that is really easy to make changes to also! I think a chocolate chip muffin would be great with a Cocoa Puff crumble, or a cinnamon muffin could be topped with Cinnamon Toast Crunch crumble! There's so many options to try and they all sound so yummy!

 

Muffin Recipe

Serves 6

Ingredients:

- blueberry, strawberry, or mixed berry muffin mix of choice, prepared according to package instructions

- 1 tbsp butter

- 1/2 cup fruity cereal (such as Trix, Fruity Pebbles, Froot Loops, etc.)


Steps:

1. Soften butter in the microwave for about 25-30 seconds, making sure it does not melt.

2. Crush cereal in a plastic bag using a heavy object until it becomes a fine powder.

3. Combine the butter and cereal until it becomes like wet sand.

4. Divide the prepared muffin batter between the six muffin liners (or double the crumble amounts if your muffin mix makes 12 muffins)

5. Top each muffin with the crumble.

6. Bake muffins according to the package instructions.

*Tip: If your muffin mix calls for milk, soak some extra cereal in the milk for about an hour, then strain and use the "cereal milk" in your muffins for extra cereal flavor!
