Breakfast Oatmeal Cookies

Yes, you read that right. Cookies for breakfast! This recipe is basically just oatmeal in cookie form, but it tastes so good and it is also pretty healthy! These are perfect for breakfast, especially if you are in a hurry since they're easy to make ahead of time! However, they also make a great snack or dessert, since they're basically just healthy cookies.

Another great thing about this recipe is that it is very customizable, uses ingredients you probably have in the house, and is cheap to make. Mine are made with raisins and chocolate chips, but the mix-in options are endless! I'm so sorry for not posting in a long time, but I will definitely be putting up several recipes closer together than usual to make up for it! Hopefully you try this recipe out and make it your own! I'd love to see what flavor combos you come up with!

 

Breakfast Cookies

Serves 9

Ingredients:

- 1 cup rolled oats

- 1 tsp cinnamon

- pinch of salt

- 1 medium overripe banana

- 1/2 cup nut butter (I used almond)

- 1 tbsp plant-based milk (I used cashew)

- 1/4 cup total of mix-ins (raisins, chocolate chips, coconut, whatever you like!)


Steps:

1. Preheat the oven to 325 degrees Fahrenheit.

2. Mash banana with a fork or rubber spatula.

3. Add oats, salt, cinnamon, nut butter, and milk and stir until a dough forms.

4. Add your mix-ins and mix until well distributed.

5. Line a cookie sheet with parchment paper or a silicone mat.

6. Scoop cookies onto the tray and flatten them down into discs, making them as uniform as possible.

7. Bake them for 11-12 minutes, or until they are set and the bottom is lightly browned.

8. Let cool for a few minutes before enjoying!

*Tip: For an extra crunch without having to add nuts, use crunchy nut butter!
