BBQ Jackfruit Bowls

I've been wanting to try making pulled jackfruit for a while, and I finally did it! This bowl turned out really good, although I definitely recommend eating it right away. It is still good as leftovers, but tastes the best the first day! When cooked this way, jackfruit resembles pulled chicken or pork and is therefore a great alternative to meat! If you prefer sandwiches or tacos, you could certainly use the jackfruit recipe and make one of those with it instead. I hope you enjoy this fresh and delicious recipe!!

Jackfruit Bowl Recipe
Serves 4
Ingredients:
- 2 tsp onion powder
- 2 tsp garlic powder
- 1 tsp smoked paprika
- 2 tsp liquid smoke
- 20 oz drained jackfruit (2 cans)
- 4 cups vegetable broth
- 1 tbsp lime juice
- salt & pepper
- 1 cup bbq sauce (+ extra for topping)
- 1 individual container plain unsweetened coconut yogurt
- 1/8 cup apple cider vinegar
- 1/4 cup pineapple juice
- pinch of sugar
- 1 bag broccoli slaw
- 1/2 cup pineapple tidbits (+ extra for topping)
- 1/4 cup cilantro (+ extra for topping)
- 4 servings of brown rice, cooked
- pickled red onions (optional)
Steps:
1. Add the onion & garlic powders & paprika to pan and stir over medium heat until fragrant.
2. Add the liquid smoke and drained jackfruit and stir to combine everything.
3. Add vegetable brother and cook for about 45 minutes, covered.
4. Check and stir the jackfruit about every 5 minutes.
5. Add more vegetable broth or water as needed so that the jackfruit can continue to soften.
6. Once the jackfruit is soft and falling apart, remove the lid and cook over low heat until all the liquid is gone (time varies depending on how much liquid is left).
7. Shred the jackfruit until it is the consistency of pulled chicken.
8. Add lime juice and salt/pepper to taste.
9. Add barbecue sauce in slowly and stir to coat.
10. Cook uncovered on low for about 5 minutes or until the barbecue sauce cooks in and becomes less wet.
11. To make the slaw, combine coconut yogurt, apple cider vinegar, pineapple juice, salt, pepper, and sugar and whisk until smooth.
12. Add broccoli slaw, pineapple, and chopped cilantro and stir until coated in the sauce.
13. Layer rice, bbq jackfruit, broccoli slaw, pickled red onions, extra pineapple, extra bbq sauce, and extra cilantro to create a yummy bowl!!
*Tip: Add the sauce into the slaw a little bit at a time and mix, if you use it all the slaw might get soggy so be careful with the amount.
