Apple Cinnamon Chia Pudding

I love the combination of apple and cinnamon so I decided to put it into a chia pudding! Honestly, I am not a huge fan of the texture of chia pudding, but the flavors of this were incredible and it turned out really creamy! The texture is definitely an acquired taste, so if you already know you like it then you'll hopefully LOVE this recipe.

In mine, I used the apple cider jam from Trader Joe's, which is not always in season, so if you don't have any then you can use any other apple jam or apple butter from the store! However, if you do have or can find this one at Trader Joe's, I highly recommend it because it has amazing flavor! Overall, the flavors all together in this are super good and could even be transformed into overnight oats (following the instructions but substituting triple the amount of oats instead of chia seeds) if you're not a fan of this texture.

 

Chia Pudding Recipe

Serves 1-2

Ingredients:

- 3/4 cup almond coconut milk

- 1/4 cup chia seeds

- 2 tbsp apple jam

- 1/2 tsp cinnamon

- 1/2 cup vanilla flavored coconut yogurt

- granola (preferably apple flavored!)


Steps:

1. Combine apple jam, milk, yogurt, and cinnamon in a resealable jar or container.

2. Add chia seeds and stir until fully combined.

3. Close lid and refrigerate overnight or for a few hours until thickened.

4. Top with granola.

*Tip: If you don't like the texture of the chia seeds, blend them in a blender or food processor before adding to the liquid mixture.
