Quinoa Cakes Two Ways

I wanted to make something with quinoa, but I'm not typically a huge fan of it on its own. I came up with the idea to make some quinoa "cakes", which are basically little patties of quinoa with some other fun ingredients in them. I decided to make two different kinds, both a sweet and a savory variety. The savory one ended up being my favorite, but they were both yummy in their own ways.

I made the savory ones first and they held together really well as little patties, but the sweet ones didn't cooperate quite as much. I decided to try another method with those and it worked much better, so each recipe is a different type of cake, but they're both really good. I especially recommend the savory ones as a nice lunch or side dish, and the sweet ones as a breakfast or healthy dessert!

 

Pizza Quinoa Cakes

Makes 2 servings

Ingredients:

- 1 cup cooked quinoa

- 1/2 tbsp garlic powder

- 1/4 tbsp Italian seasoning

- 1 egg

- 1/4 cup panko breadcrumbs

- 1/4 cup shredded mozzarella cheese

- salt & pepper to taste

- pizza sauce (for dipping)

- additional pizza toppings (optional)


Steps:

1. Combine quinoa with garlic powder, italian seasoning, salt, and pepper, then taste and adjust spices to your liking.

2. Add egg, panko, and cheese to the mix, along with any other desired pizza toppings and mix with a fork until everything is completely combined.

3. Heat a small skillet on medium and add cooking spray.

4. Use a 1/4 cup measure to scoop some of the mixture and turn it out onto the pan.

5. Use the back of a spatula to flatten the scoop into a patty.

6. Let the patty cook for about 2-3 minutes, then flip carefully and cook another 2-3 minutes.

7. Repeat this process until all of the mixture has been used (makes about 4 patties).

8. Serve with pizza sauce on the side.


 

Apple Cinnamon Quinoa Cakes

Makes 2 servings

Ingredients:

- 1 cup cooked quinoa

- 1/2 tsp lemon or lime juice

- 1 apple, peeled and grated

- 1 tbsp brown suagr

- 2 small shortbread cookies, crushed

- cinnamon to taste

- pinch of salt


Steps:

1. Combine all ingredients in a bowl using a fork.

2. Heat a small skillet to medium and add cooking spray.

3. Add the mixture and let it sit for a minute, then stir.

4. Repeat, stirring then letting it sit until there are some crispy, brown spots throughout.

5. Transfer to a plate and form into a large "cake" and sprinkle with more cinnamon.
